Time Saving Tips
While tacos are not the most labor intensive of meals, a parent can always use a few shortcuts. I try to make about 2-3 times more taco meat than we need
and then freeze the leftovers in single serving packs (enough for the five of us). I can simply thaw and then reheat the meat in a small saucepan.
I wash lettuce by filling the salad spinner with cold water (without the basket in it) and then soaking the lettuce for a few minutes to allow the excess dirt to swish off and sink to the bottom. I then drain the lettuce into the basket before spinning it. I place leftover lettuce in a resealable bag along with a paper towel (to absorb the moisture) in the fridge for easy salad preparation in days to come.
